Happy Labor Day! It’s so nice to have a Monday off work and a nice short 4 day work week. We spent a lot of time with family this weekend. My husband’s family has a lot of babies on his dad’s side. There are 6 kids ages 2 and under, so it’s really wild to see them. There is never a dull moment. I think Anthony was slightly overwhelmed with all of the babies. We definitely will be waiting a few years before that happens. Instead we just got a dog, kind of. His parent’s gave us their tiny 6 pound, long haired chihuahua. He’s adorable, but I definitely feel a bit like a first time parent. I woke up at 3:30am to him barking. Hopefully he’s just getting used to his new house.
This is a nice easy recipe to take your mind off of going back to work tomorrow and it’s a perfect recipe for the end of summer. Personally, I want to eat as much BBQ as possible during the summer. And as Anthony would say “Bacon just makes everything taste better.” Plus, it’s a good way to test out that BBQ rub from my last post! It’s only 4 ingredients and it only takes about 10 minutes to prep, so this would be an easy weeknight dinner too! Just prep it, stick it in the oven and lay on your couch for 45 minutes.
Bacon Wrapped BBQ Chicken
Prep Time – 10 mins
Bake time – 50 mins
Yields – 2 servings
- 5 strips of bacon
- 5 chicken thighs
- BBQ Seasoning Rub
- 1/2 cup BBQ Sauce
- Rub the BBQ Seasoning into the chicken, making sure that the chicken is fully coated in the seasoning.
- Wrap each bacon strip around a chicken thigh.
- Baste with 1/4 cup of BBQ Sauce.
- Cook chicken for 40 minutes or until the chicken is almost done.
- Baste with the other 1/4 cup of BBQ Sauce and put the chicken back into the oven for 10 mins.
- Serve immediately.
