Cucumber, Tomato and Feta Salad

So we took Anthony’s parents dog. I’ve never had a pet before and it’s definitely interesting. I loved this dog at his parents house. He’s pretty low key. You basically just have to walk him, feed him and pet him. He doesn’t like toys or dog treats. He’ll only eat human food as a treat. I feel the need to constantly keep an eye on the dog though. We just got new furniture and I really don’t want him peeing on anything. He has had 1 accident so far and it was on our new table, which was easy to clean at least. And I feel like he’s sleeping a lot more than he used to, so now I’m feeling the need to entertain the dog. And he’s not used to living in an apartment near other people, so he barks at everything. One of our neighbors already told me that he has a loud bark for a little dog. I’m beginning to feel crazy, I guess. Anthony keeps telling me that he’s just a dog and can entertain himself. We’re going to be leaving him alone at home a lot more than he’s used to and I feel bad. I guess we’ll see what happens.

Anyway, this has nothing to do with this salad. This is a simple, summer side. We ate it with the Bacon Wrapped BBQ Chicken. We’re trying to watch what we eat a little bit better. When we moved we ate out A LOT, because we took awhile to unpack. This is the perfect side for that. It changes up our normal routine of just having a salad. It’s fresh tasting and super easy to make. For some reason cucumbers and tomatoes just taste like summer to me. I’m trying to hold onto the summer as long as I possibly can! You can eat this salad with pretty much any meal to lighten it up. It was really nice the the Bacon Wrapped BBQ Chicken, so I highly suggest that! I added olives to mine, because we love olives in everything. Feel free to omit them though. I know some people really don’t like them. Again, I am only cooking for 2 so obviously depending on your family size, you’ll need to modify this recipe.



Cucumber, Tomato and Feta Salad

Prep Time – 10 mins

Yields – 2 servings



  • 1/2 a cucumber
  • 1/2 a tomato
  • 1/4 cup black olives
  • 1/8 cup feta cheese
  • 1 TBSP olive oil
  • 1 1/2 TBSP red wine vinegar
  • salt and pepper to taste


  1. Peel the cucumber. I usually leave some of the skin.
  2. Chop the tomato and olives.
  3. Add the feta cheese, olive oil, vinegar, salt and pepper.
  4. Stir until completely mixed together.
  5. Refrigerate until ready to serve.
