Apple Crisp

I think I fell off the face of the Earth. Seriously. This week has been insane and I’m feeling exhausted. Anthony cracked his car windshield, so we had to drive an hour to get it fixed during rush hour yesterday morning. Then, an hour back at night. So basically I spent my day in the car yesterday. Besides that we have a sick doggy and it’s making me really sad. He was peeing blood, so I took him to the vet and she found a mass in his bladder. It could be a tumor or a blood clot, but we won’t know. I have antibiotics for him, so hopefully that helps and the mass with go away.

Anyway, I’m sorry that I haven’t posted all week. Here is a delicious apple crisp to make it up to you. Anthony ate the whole thing, so according to him it was really good. We went apple picking a few weeks ago. It was so nice. It was the perfect fall day. And we bought this amazing roasted corn. It was soo sweet. I’m still dreaming of it. We still have apples left, so I will probably be making this a few more times. It was so good. And it isn’t really dessert because it’s apples, right? It’s basically like eating fruit and that’s good for you. Make this soon while it’s still apple season. It will make you feel like it’s fall in your house.
