Dill Chicken Salad

I am LOVING being off of work. Seriously, LOVING it. I can’t even put it into words. It is so much easier to grocery shop during the week than on the weekends too. I really enjoy grocery shopping. I like to look around and see all the different types of food. On the weekends there are so many people at the store it’s impossible to look around and get what you need.

I am always looking for new things to eat for lunch. It’s just the hardest meal to plan for and my job is in the middle of nowhere, so I can never go out to lunch. It makes it difficult. This chicken salad is so easy though. The food processor basically does all of the work for you. I usually prefer tuna salad to chicken salad, but add a little dill and that is a whole new story! I love me some dill.

We are actually growing a small garden this summer and I am definitely going to be growing dill. It’s such a nice herb to have around, especially during the summer. The taste of dill reminds me of summer. If you have any tips on growing herbs, please let me know. Some years I get really great products from my garden and then some years I get nothing. I can’t understand it.


Dill Chicken Salad

Yields – 4 sandwiches

Prep time – 15 minutes

Ingredients

  • 2 cans of white meat chicken
  • 1/2 a red pepper
  • 2 stalks of celery
  • 2 TSP of dill
  • 1 TSP of parsley
  • 1/4 TSP of salt and pepper
  • 1/2 cup of mayonnaise
  • 2 TSP of lemon juice

Directions

  1. Place the celery and red pepper into the food processor and chop until well chopped.
  2. Add the rest of the ingredients into the food processor and chop until fully mixed.
  3. Chill for at least and hour.
