Deviled Eggs


There are 8 more days of school until Summer! I can taste the freedom! It’s going to be wonderful. Last weekend was Memorial Day weekend and we had these grand plans of BBQing and going out on our kayak, but that didn’t happen! We did get to BBQ, but we couldn’t find somewhere to launch our boat. We went to a park near a canal and there was literally nowhere that we could launch from! It was kind of a bummer, but we did see a snake. I have NEVER seen a snake in the wild in New Jersey. It was so crazy!

We made these deviled eggs with leftover hard boiled eggs from Easter. That is how behind I am on posting recipes. It’s really bad. I’m sorry! As soon as the school year is over, I promise I will be better about posting! Here’s another secret… I don’t even like hard boiled eggs. At. All. I think it’s a texture thing for me, but I just can’t eat them. And it’s really odd, because I LOVE to eat eggs. Anthony ate them though and loved them. He took them for lunch.


Deviled Eggs

Yields – 6 eggs

Prep time – 15 minutes


  • 3 hard boiled eggs
  • 1/8 cup of mayo
  • 1 TSP mustard
  • salt and pepper to taste
  • paprika for garnish


  1. Cut the eggs in half and remove the yolk.
  2. Place the yolk, mayo, mustard, salt and pepper into a small bowl and mash the ingredients together.
  3. Spoon the mixture back into the eggs and serve.
