I passed the Praxis! Now I just have to send away all my paperwork and I will be able to teach another subject. I have been MIA with all the studying that I have done, but I am back! And we are going out to dinner tonight.
This is one of my favorite dishes during the summer time. It really is the epitome of summer. All the ingredients are fresh and even could be grown in your garden. My garden isn’t doing too well this year, so these did not come from my garden. People seem to be giving their zucchini’s away like candy though and this one was a gift. We do also make this in the winter with peas instead of zucchini.
Anthony’s family calls this dish, funky Italian vegetables. It’s an easy side and will help you use up all the zucchini that I hope you’re having luck growing. You can make this dish with sauce that you already made or if you don’t have frozen sauce in your freezer at all times like I do, you can just use a can of sauce. You can also make this with peppers, mushrooms or any other vegetable you like! Either way is pretty simple! It also makes awesome leftovers.
Summer Vegetables with Tomato Sauce
Yields – 4 servings
Prep time – 5 minutes
Cook time – 15-20 minutes
- 1 large zucchini
- 1 cup of grape tomatoes
- 1/2 yellow onion
- 1/4 TSP of pepper
- 1/4 TSP of salt
- 1/2 cup tomato sauce
- 2 cloves of garlic
- 1 TSP Italian seasoning
- 1 TSP of olive oil
- Chop all of your vegetables into bite sized pieces
- Heat a large frying pan with the olive oil over medium heat.
- Add the zucchini to the frying pan until they are soft.
- Add the onion, tomatoes, garlic and all of the seasonings to the pan.
- Once all the veggies are cooked, add the tomato sauce and stir until the tomato sauce is warm.
