It’s my little blogs 1 year birthday! I have really loved blogging this year. It’s nice to get to share what is happening in my life and my recipes. And honestly, it’s so nice to be able to go back and look up my recipes easily. I can’t count the number of times that I’ve gone back and looked up a recipe to use it again. It’s a great resource for myself and it’s just fun!
I made these cookies to celebrate, but they’re kind of a cheater recipe. I feel like I should have made some fancy cake, but dairy free cake sounds hard! And these were really delicious!
I have been really trying to explore products that are already dairy free, instead of venturing out on my own. I’m a little nervous to try my own recipes. I have tried a few breakfast recipes, but I’m yet to try a real dessert. I’ve realized that Pillsbury sugar cookies are dairy free as well as some Duncan Hines cake mixes and icings. It makes life so much simpler! You can use any bag of cake mix with this recipe, not only lemon.
Lemon Cookies (Dairy Free)
Yields – 24 cookies
Prep time – 5 minutes
Cook time – 8 – 10 minutes
- 1 package of cake mix
- 2 eggs
- 1/2 cup vegetable oil
- Pre-heat the oven to 350 degrees.
- Mix all the ingredients together.
- Roll the dough into small balls and place onto a greased cookie sheet 1 inch apart.
- Back for 8-10 minutes.
