Brined Pork Chops


I have fallen off the face of the Earth! I am trying to get used to this new job and it has been a rough transition. I am really trying though!

I am also starting to cook a lot more fall recipes and less on the grill. It really is depressing for me. It gets dark SO early and I can’t enjoy my grill as much anymore! Plus, it’s been raining here like CRAZY!

This is one of those recipes that gives me a pick me up though. It is really simple and fast for an easy weeknight meal. And I am ALL about those easy weeknight meals right now.


We’re also kind of in a cooking rut, where we just make the same thing all the time. I haven’t been very adventurous lately, but I’m SO glad I tried this recipe! If you’re in a rut also, give this one a try. I promise it won’t disappoint!

Brined Pork Chops


Prep time – 15 minutes

Cook time – 15 minutes


  • 2 bone in pork chops
  • 2 cups of water
  • 1/4 cup of kosher salt
  • 1/8 cup of sugar
  • 1/4 cup of white vinegar
  • 1/8 bunch of thyme
  • 1 tsp black peppercorns
  • 1 bay leaf


  1. In a pot bring the water to a boil. Add the salt, sugar, vinegar, thyme, peppercorns and bay leaf. Stir until the salt and sugar are completely melts.
  2. Add 1 cup of ice cubes to the brine and allow the brine to cool.
  3. Add the pork chops and allow them to soak for at least 8 hours.
  4. Cook the pork chops in a pan until the are cooked through.
