My life has been insanely busy. We are constantly going lately. And we are doing so many fun things, so I really can’t complain. I just want a day to lay on my couch and do nothing though! Isn’t that what cold winter weekends are for?! Now it’s starting to get nice and I feel like I missed my opportunity! Dang you weather, not giving me a snow day this year!
Since we have been insanely busy, we’ve been trying to only go to the grocery store every other week. On the in-between weeks we’ll go to the farmers market near our house to grab fruit, veggies and milk. It seems to be working out ok for us. I’ve been trying to buy heartier vegetables that will last awhile, so we have been eating a lot of cabbage and broccoli.
I got tired of just cooking to cabbage, so I made it into coleslaw! My mother in law always makes a vinegar based coleslaw and I still think her’s comes out better even though I’m using the same exact ingredients. She has the magic touch I guess. It is a delicious and refreshing side dish. It would be perfect for a picnic!
Vinegar Based Coleslaw
Prep Time – 15 Minutes
Yields – 8 servings
- 1 head of cabbage
- 1 red pepper
- 5 celery stalks
- 3 large carrots
- 2 TBSP fresh chopped parsley
- 1/4 cup red wine vinegar
- 1/8 cup olive oil
- salt and pepper to taste
- Finely chop the cabbage, red pepper, celery, carrot and parsley.
- Add all the ingredients to a large bowl and mix.
- Chill for 30 minutes before serving.
