Crockpot Chicken Tacos

When the previous owner of our house was renovating, he installed central air throughout the house. I was SO excited about this, because a lot of the houses in our town are older and don’t have AC. It definitely is a perk of the house. It was 95 degrees on Sunday so we decided to turn it on and of course it wasn’t working. So we all sweat. Even Orbit was sweating and I’m not sure that’s even possible.

We called the company that installed it first thing Monday morning (after my dentist appointment blah!) and they came out within a half hour to fix it. The company was so nice and took their time to make it right on the hottest day of the year so far and they did it for free since they just installed the unit. I was so pleased! I like my house so much better now that it’s cool!

Since it was SO hot in the house, I did not want to turn on the oven or the stove. We spent a few days grilling and making crockpot meals. I wanted to change up our usual taco night, because we eat tacos a lot and I thought having chicken tacos would be fun! It definitely was a good choice. These were delicious. Add a little salsa and some cilantro and it’s amazing! I would highly suggest giving these a try one of these hot summer days when you don’t want to turn on the oven!

Crockpot Chicken Tacos

Yields – 4 servings

Prep time – 10 minutes

Cook time – 8 hours on low, 4 hours on high


  • 3 large chicken breasts
  • 2 TBSP taco seasoning
  • 1/2 cup chopped onion
  • 1/2 cup chicken broth
  • 1/4 cup fresh cilantro


  1. Place all your ingredients into the crock pot and mix them together.
  2. Cook on low for 8 hours.
  3. Take the chicken out of the crock pot and shred it into bite sized pieces.
  4. Place the chicken into your taco shell and top with your favorite toppings!
